I’m adding Arabian Spices to my kitchen adventures: Ras el Haonut and Cumin. Scents and Flavors.
Cumin – or Roman cumin – is a very strong smelling spice usually added to chicken tazhin (vege version: cauliflower!) with marinated lemon, onion and small green olives.
Ras el Hanout – is used in many Middle Eastern and North African countries. Their mixture – the composition often depends on the store owner. They contain up to 100 ingredients and many believe that Ras el Hanout is an aphrodisiac… A few pinches are enough to give the dish exotic aromas.
